I've solo sailed ocean-going cats with diesel inboards, but never with outboards, and now I'm eyeing a 40ft cat that runs outboards and would love to hear from anyone with experience. What are the pros and cons? Less prop wash on the rudders, and do waves ever surge into the outboard wells in following seas?

Outboards on a 40ft cat can work well... lighter, easier to maintain and more efficient at low speeds . You will get less prop wash on the rudders, so steering in tight spots can be trickier. And yeah in following seas, waves can surge into the outboard wells if theyre not well protected. Worth checking the design before committing.
